Tropical Salad

I don't remember ever finding anyone who didn't like this salad!  It's always been a favorite of mine!  Probably not great for dieters, but I need to put some weight on, so I'm enjoying it, guilt-free!!  I really don't think you can go wrong with this one and you can have it ready to serve in minutes!

INGREDIENTS
15 ounces Whipped Topping (like the brand name, Cool-Whip)
1 Can (16 ounce) Mandarin Orange slices
1 Can (20 ounce) Crushed Pineapple
2 Cups Mini-Marshmallows
1 Cup Shredded Coconut
1 Jar (10 ounce) Maraschino Cherries
1 Cup Walnut pieces (optional)

PREPARATION
Scoop Whipped Topping into a large bowl.  Drain the juice from the Mandarin Oranges, Crushed Pineapple and Maraschino Cherries.

TIP:  Save the juice you drain from the three fruits.  Put them in jars or bottles and refrigerate.  They are great to add when making many marinades!!

Add the fruit to the Whipped Topping and stir in well, mixing thoroughly.  The Maraschino Cherries will give the pale salad a nice reddish blush.  Now, add your Shredded Coconut and Mini-Marshmallows and mix them in well.

Finally, if you like nuts, add the Walnuts, or if you prefer, Pecans or Pistachios to the salad and stir them in well.  Chill salad in the refrigerator until ready to serve.  This was on my dinner table tonight!
