Four Bean Salad

Here's an easy to fix salad I think most people enjoy.  I've had it both sweet and unsweetened, but I really prefer the sweetened variety.  Depending upon your taste, you may use the sugar in my recipe, or leave it out.  I used to be lazy and just buy it prepared in a jar, but it was rather expensive and for some reason, the grocery store here no longer carries it.  There is absolutely nothing to making it...you can have it ready in a matter of minutes.  I just remind you to make it the night before, so it can marinate and get the flavor through the salad.

INGREDIENTS
2 Cans (15 ounce) Cut Green Beans
2 Cans (15 ounce) White Wax Beans
2 Cans (15 ounce) Kidney Beans
2 Cans (15 ounce) Garbanzo Beans (often called Chick Peas)
1 Large Sweet White Onion
1 Jar (4 ounce) Pimentos

MARINADE
1 1/4 Cup Apple Cider Vinegar
1 Cup Olive Oil
1 Cup White Granulated Sugar
2 Teaspoons Minced Garlic
1 Teaspoon Italian Seasoning
Salt to taste
Pepper to taste

Measure and pour all of your marinade ingredients into a jar you can cap off for shaking.  Shake, as you would mixing a vinegar and oil salad dressing, until all ingredients are thoroughly mixed well.

Open and empty all of the canned beans into a colander, so you can wash them.  Canned beans have a rather "slimy" juice and residue on them and you want to wash that off!  It doesn't add to the flavor nor the texture of the salad!  Rinse well with cold water.  Allow to drain well after rinsing and pour all beans into a bowl.

Finely dice the sweet onion and add to the beans.  Open the jar of Pimentos pouring off the juice and add them to the salad.  Stir to mix the ingredients well in the bowl.

Now, pour your freshly shaken Marinade into the bowl and mix again, making sure the marinade thoroughly covers the beans, onion and Pimento.

Put your bowl of salad into the refrigerator and allow to chill and sit overnight, so the marinade imparts it's flavor into the other ingredients.  It's now ready to serve!  The longer the bean mix marinates, the better the flavor, so far as I'm concerned!
